Banana pancakes with Creme Eggs

Happy Pancake Day!!
(or Eve if you're reading this on Monday) 

Hope you're having the happiest day and if not - make some pancakes! I love a good old fashioned crepe, one with layers and layers of jam & a ton of icing sugar on top all rolled up and cut in half. Ah, my whole childhood encapsulated into a bit of dough. Lately I have been making proper pancakes instead of thin crepes though - the healthy kind made out of just 2 ingredients! Who doesn't like a bit of indulgence though, right? Especially when we're celebrating! And when your pancakes are pretty much the healthiest thing you're going to eat today then there's nothing wrong with dashing a whole bag of Mini Creme Eggs on top, is there?

Banana Pancakes with Creme Eggs
Add chocolate sauce for some extra indulgence

Ingredients
  • 2 bananas 
  • 4 eggs
  • half a banana for decoration
  • chocolate sauce
  • 1 bag of Mini Creme Eggs
Instructions
1. Chop up bananas and put in your blender (can be smoothie maker). Add eggs and blend until smooth. 2. Preheat your pan on medium heat and add a tad of cooking olive oil. 3. Pour two pancake's worth into the pan and flip over half way through. Should take about 1 minute per side. 4. Add all your fancy toppings & serve!

PS: They are a tad burnt, because - pancakes!
