Today's recipe is all about that healthy kick. But salads are dead boring, I hear you say (don't lie to yourself, you hate salads as much as I do). Yes, yes, yes - there's a way to save the day though - with a DRESSING. This tuna & rocket salad with mustard dressing is at least 9 out of 10. And that's only because salads can just never get better than 9. FACT. Unless we're talking this baby kale & bacon salad because that was a good 9.25. But back to today's delicious recipe!
This salad is very much inspired by Kayla Itsines' 28 Day Healthy Eating & Lifestyle Guide (you can get it here) which I've been following recently. And when I say following I mean following very loosely. I've gone through week 1 without much problems but man that first week was very cabbage-heavy. When you're on day 3 still eating that one red cabbage it does get a little boring to be fair. But some recipes in that book are bloody delicious! One of them being this salad. The dressing takes it to a whole new level!
Ingredients
- 100g black rice
- 1 can of tuna in brine
- half a cucumber
- 4 radishes
- 1 handful of rocket leaves
- 3 spring onions
- 2 garlic cloves (crushed)
- 1/4 cup white wine vinegar
- 3 tsp mustard of choice
- salt & pepper
Instructions
1. Chop up all vegetables and mix together. 2. Prepare black rice as per instructions on the packet (usually 30-40 min boil), use as a bed for the salad adding vegetable mix on top. 3. Make your dressing by mixing crushed garlic, white wine vinegar and mustard with some salt & pepper. 4. Top with some rocket & serve!
