Heavenly faux Russian doughnuts
Do you sometimes have this unbeatable craving for dough? I do. Way too often. They say it's a lack of amino acids. I say I just want some bloody bread or a doughnut or at least one of those mini pizzas they sell in Tesco's. Here's one of the easiest recipes to beat a craving like this (not in a healthy way, this is a way full of decadence, indulgence and indisputable weight gain if consumed on daily basis). Do you know what Russian doughnuts are? Now imagine them bigger, moister and maybe even a little more delicious! And they take less than 10 minutes to make! This particular recipe is very much inspired by my mum who makes them slightly smaller (and slightly less burnt!) but absolutely delicious! They have quark in the dough which makes them oh so soft and addictive!

Heavenly Faux Russian Doughnuts
Especially delicious with fresh cream on top!

  • 190g plain flour 
  • 40g of softened butter
  • 1 cup of quark (you can get it in Tesco right next to cottage cheese!)
  • 1 tsp baking soda
  • 2 eggs
  • cooking olive oil 
  • icing sugar to sprinkle on top
1. Mix flour, softened butter, quark, baking soda and eggs. 2. Keep whipping until the dough is sticky but it must not be runny. 3. Pour cooking olive oil into a pan - make sure there's about 2-3cm so the doughnuts can float on top. Heat up to medium. 4. Use spoon to scoop out dumpling shaped bits of dough and flip them in the pre-heated oil. 5. Fry until they are golden from both sides (about 3 minutes on each side). 6. Either sprinkle icing sugar on top or cover the doughnuts in it completely.
