When you're cooking just for yourself it can sometimes become a bit of a chore. More than cooking for two or three people, in fact. That's why I'm always on the lookout for simple and quick but also tasty recipes which are easily adjustable to one person portions. These roasted Cayenne potatoes are one of my favourite recipes for a quick light supper after a long day at work.
