If there's one thing Czech people are good at then it's baking Christmas cookies. We are obsessed. No word of a lie most people probably make about 20 different kinds of cookies and start baking at the end of November. And if you're crap at baking then you hire a professional baker extraordinaire (your mate's nan) to bake it for you. FACT. Anything from vanilla rolls to bee hives and Linzer cookies. And gingerbread cookies! Obviously.
Ingredients
- GINGERBREAD
- 750g plain flour
- 200g caster sugar
- 1 cup of honey
- 150g unsalted butter
- 3 eggs
- 3 tbsp cocoa
- 1 tbsp gingerbread spice
- 1 tsp ground cinnamon
- 2 tsp bicarbonate soda
- ICING
- half a cup of lemon juice
- half a cup of icing sugar
- 2 egg whites
Instructions
GINGERBREAD:
1. Mix all ingredients into a dough and leave to rest in the fridge overnight.2. Knead the dough a little more. Cut out shapes. 3. Bake in a preheated oven (180) until brown (ca 7 minutes).
ICING:
1. Mix all ingredients until thick. 2. Use a rolled up sheet of paper or a plastic bag with a cut off corner to decorate! (who needs actual baking utensils, right?)
